Cook chicken in large skillet & either dice or shred once done. Add taco seasoning & prepare according to package directions.
Add in black beans and green chiles. Mix up until both are distributed throughout the chicken & warmed through.
Using a stove-top griddle (skillet would be fine if you don't have one), spray with cooking spray & heat until warm. Place 1 tortilla on griddle, top with 1 tbsp of cheese and about 1/3 cup of chicken mixture (more if desired). Add another tbsp of cheese. Place another tortilla on top.
Once the bottom tortilla has browned, flip quesadilla & brown the other side. Cut in half or in fourths. Top with sour cream and salsa & enjoy!
