6 Ingredient Mini Quesadillas

Tacos or quesadillas are a regular item in our weekly dinner rotation. They’re simple, quick & delicious and perfect for a busy weeknight. And they’re so easily switched up – stuff with steak instead of chicken, accompany with my infamous guacamole instead of salsa, substitute lettuce for tortillas. You get the idea. Since we have pretty much exhausted our taco inventions (we’re not that creative), I started diving into quesadillas.

We really love tacos, but we also really love quesadillas. We almost always order them at restaurants when it’s an appetizer option. I order them at our favorite Mexican restaurant all the time. Truly… they’re hard to mess up. So when in doubt, we order a quesadilla. If a restaurant messes it up, I don’t think we’d be going back.

Ok, let’s get back on track. I’ve finally figured out a solid recipe for a weeknight meal solution. You can make quesadillas as simple or as complicated as you’d like and I’m sure you’re not surprised I err on the easy side. I’ve landed on a 6 ingredient mini quesadilla recipe that I can whip up in 30 minutes or less. They’re flavorful and satisfying while being small enough (I use street taco sized tortillas) to maybe even eat two. On those nights where one isn’t going to cut it. We’ve all been there, right?

6 Ingredient Mini Quesadillas

Ingredients

  • 1 lb chicken, diced or shredded
  • 1 pkg taco seasoning
  • 2 tbsp green chiles
  • 1/2 cup black beans, drained
  • cheddar cheese
  • small flour tortillas

Instructions

  1. Cook chicken in large skillet & either dice or shred once done. Add taco seasoning & prepare according to package directions.

  2. Add in black beans and green chiles. Mix up until both are distributed throughout the chicken & warmed through.

  3. Using a stove-top griddle (skillet would be fine if you don’t have one), spray with cooking spray & heat until warm. Place 1 tortilla on griddle, top with 1 tbsp of cheese and about 1/3 cup of chicken mixture (more if desired). Add another tbsp of cheese. Place another tortilla on top. 

  4. Once the bottom tortilla has browned, flip quesadilla & brown the other side. Cut in half or in fourths. Top with sour cream and salsa & enjoy!
