Easy Garlic Mashed Potatoes

The first cool breeze of fall showed up last week and it always means one thing in our house – fall recipes for dinner. Actually, I’m surprised it took this long. Usually I start craving chili and chicken noodles long before September and typically cave. But, I held off this year and yesterday, we finally had crock-pot roast and easy garlic mashed potatoes. One of our absolute favorite combos.

Such a simple side dish – mashed potatoes – and a very common one in the Midwest at least. I’ve spent a few years refining my recipe to our liking. My “experiments” began with adding a dash of this here and that there until I finally took the time to pay attention to what I was doing. We like our potatoes flavorful and my answer was adding lots of garlic and Italian seasoning. I prefer red potatoes with skins on and a creamy texture. There are so many ways to make the delicious side dish, but below, I’ve (finally) written out my recipe.

These easy garlic mashed potatoes are such a good compliment to almost any main course. We make them with a lot of chicken dishes, with grilled steaks, alongside pork chops – and honestly, I could eat them as a meal on their own.

Easy Garlic Mashed Potatoes

Ingredients

  • 10-12 medium red potatoes, diced into 1 inch pieces
  • 3 tbsp unsalted butter
  • 1/4 cup milk
  • 3 cloves crushed garlic
  • 1 tbsp Italian seasoning
  • 1 tsp salt

Instructions

  1. Place diced potatoes (with skin) in large pot & add water until potatoes are covered.  Boil until potatoes are soft and ready to be mashed.

  2. Once potatoes are ready, drain water & mash.  It's ok to leave some chunks.

  3. Add in the butter and milk & stir until butter is melted and milk is incorporated - this will make the potatoes nice and creamy.

  4. Next, add the garlic, Italian seasoning & salt. Mix well.

  5. Serve immediately!

Recipe Notes

*It's ok to use salted butter - simply add less salt if you do.
