There are two goals I’ve had while meal planning this summer – spend less at the grocery store and make smaller, healthier portions. I’m guilty for doing quite the opposite in years past. However, once I completed my three day cleanse this past spring, I realized just how little we really need in a day. Especially if we concentrate on eating the right stuff. Now, I’m not one to completely cut out anything. I love carbs, I love cheese and pizza is a regular menu item in our home. Everything in moderation. But on this journey to not wasting money at the grocery store and improving our daily diets, I’ve truly learned a lot. Including some new, go-to recipes that not only satisfy cravings, but aren’t too unhealthy either. One of my current favorites?
Korean Ground Turkey Bowls
One item I almost always have in my fridge is ground turkey. It’s a new thing for us. After the cleanse, I really tried focusing on healthy substitutes for some of our favorite dishes. Ground turkey instead of ground beef has become common… and T doesn’t even complain. We feel better without compromising anything, really. I’m also always stocked up on basic Asian spices and oils because we love homemade chicken fried rice, so this Korean Ground Turkey Bowls recipe was a no-brainer. I can whip it up super quick on weeknights and even have leftovers for lunch the next day. Plus, it feels a little like a cheat day without actually being one.
Ready In 20 Minutes
T and I both love Asian flavors, and this does not disappoint. The sweetness of brown sugar mixed with salty soy sauce and a kick of red pepper flakes make a fantastic trio. A flavor explosion, actually. This Korean Ground Turkey Bowls recipe is easily adaptable, too. Absolutely use ground beef if you’re partial to it. Add in ginger or leave out the pepper flakes. Serve over fried rice or even add in vegetables. The options are endless – just how I like it. Plus, it can be ready in a flash. 20 minutes or less, I swear.
Korean Ground Turkey Bowls
Ingredients
- 1 lb ground turkey
- 3 cloves minced garlic
- 1/4 cup brown sugar
- 1/4 cup light soy sauce
- pinch red pepper flakes
- dash pepper
- 2 cups cooked white rice
- sliced green onion
- sesame seeds
Instructions

Place ground turkey and garlic in large skillet & cook until turkey is no longer pink.

While turkey cooks, mix together brown sugar, soy sauce, red pepper flakes and pepper in a small bowl.

Once ground turkey is cooked through, add the sauce to the skillet and stir to coat the turkey. Let simmer 3-5 minutes.

Serve immediately over cooked white rice (or fried rice) and garnish with green onion and sesame seeds (optional).

Great Ways To Change Up This Recipe
- Substitute turkey for ground beef or pork
- If you like more sacue, simply add more soy sauce & brown sugar
- Add cooked veggies for a bigger meal (we’ve done baby corn in the past!)
- Use friend rice instead of white
