Summer doesn’t only mean endless sunshine, days on the lake and weekend festivals. Summer also means great food! Getting the grill out for the first time is always such a treat. Then we have all those tasty grilling sides, fresh fruit desserts and yummy salads. Such a contrast to the heavy winter menu we typically have, it’s always fun to mix things up.
Instead of sharing a new recipe, I thought I’d do a summer recipes roundup of favorites I’ve shared over the past couple years. All of these are still on my list of summer recipes & I can’t wait to make them again. Enjoy!
Cabbage + Kale Asian Salad
I still love a good Asian salad, and now I’m adding all these ingredients to my grocery list for next week. This recipe was inspired by those salad kits you can get at your local grocer. But so much better because I added more kale, purple cabbage & even had egg rolls on the side. Can’t beat it!
Noodle Corn Casserole
A classic around my house. This noodle corn casserole originated in my grandma’s kitchen & it passed down to my mom. Now I make it on the regular – especially during grilling season. So simple and seriously delicious, it always tastes like a treat no matter how many times we make it.
Simple Guacamole
A tried and true recipe – my guacamole is always a crowd pleaser. Or a husband pleaser. Or even a me pleaser. Not to toot my own horn, but it’s seriously good. I took an online recipe, made some tweaks inspired by personal taste & suggestions. The end product is oh-so-delicious and whips up in no time.
Fruit + Goat Cheese Crostini
Say “crostini” and I’m in. Seriously, it’s one of my favorite appetizers and small plate options. Especially one drizzled with honey. There’s nothing better than the sweet flavor of berries mixed with tart goat cheese on toasted french bread slices. Perfect for a summer gathering – I’ll lick that plate clean.
Classic Pasta Salad
Last, but definitely not least, summer isn’t complete without a classic pasta salad. My mom shared this one with me (she’s my main resource for delicious recipes) and I could eat it daily. Fresh, easy to make and just plain good. You won’t be disappointed.
