This past weekend was one of those when you soak up fall as much as you can. The breeze was brisk, the trees colorful and the sun was shining. So, we went on a long walk with Cooper, did some yard work, golfed, sat in the sun and made chili. Oh, and I also made my new favorite (and addicting) Halloween snack mix. Ok, so I was really just craving candy corn – my favorite fall candy – and I wanted to make something fun for the upcoming holiday. The result? This very PG Halloween snack mix.
I’m not a big Halloween person – honestly, candy corn probably doesn’t even count, but it’s as close as I get. I don’t dislike the holiday, I’m just really bad at participating. And I prefer to keep my Halloween food free of weird gory-looking ingredients, so this simple Halloween snack mix is my effort this year. Let’s act like it counts, ok?
I should warn you on how addicting this stuff is. I based the Chex caramel coating on this recipe from Land O’ Lakes and not only does it make your entire house smell like heaven, it’s the perfect fall treat. Or Halloween treat – however you’re looking at it. Crunchy & caramal-y delicious. Moving on… I then added my absolute favorite M&Ms (caramel), peanuts, and candy corn. It’s as simple as that. A perfect salty-sweet treat. The Chex does take about an hour to make, but after that, you throw the ingredients together. Since the portions are large, this snack mix is perfect for a party or get-together. Or, just to have around the house for snacking purposes. So good!
Halloween Snack Mix
Halloween Snack Mix
Ingredients
- 1 pkg candy corn
- 1 pkg caramel M&Ms
- 1 pkg peanuts
- 1 box Chex
- 1 cup brown sugar
- 1/2 cup butter
- 1/4 cup light corn syrup
- 1/4 tsp baking soda
Instructions

Spread Chex on a greased baking sheet. Preheat oven to 250 degrees.

Bring the butter, brown sugar and light corn syrup to a boil in a medium sauce pan. Once boiling, stir constantly for 1 minute. Remove from heat and add baking soda. Mix well.

Pour mixture over chex & mix until well coated. Place in the oven for 45 minutes, taking out to stir every 15 minutes. Let cool.

Once coating on Chex has cooled & set, place in large bowl & mix in the candy corn, caramel M&Ms and peanuts.
