Oh, you know, just me back with another crostini recipe because let’s be real… does it get any better? You’ve got bread, you’ve got cheese… and now you’ve got fruit. And I’m pretty certain that’s enough to count as a meal on it’s own. At least it is for me. I could definitely survive a day on this fruit and goat cheese crostini. The sweet mixed with the tang of goat cheese and the crunch of toasted bread could quite possible be my absolute favorite combination.
That’s right – I said goat cheese.
Even better yet – honey enhanced goat cheese. I’m a true believer in adding honey to any cheese plate, so it’s accompanying my crostini as well. Not only did I buy honey goat cheese, I also added that pretty honey drizzle you see in the pictures below. For looks and added taste. Speaking of looks, notice how festive this fruit and goat cheese crostini is? Yup – 4th of July ready. I honestly cannot believe how fast June went. The 4th always sneaks up on us. And assuming that’s the same for everyone, easy recipes are the best to have around when you need a last minute party dish. Voilà! Whip these delicious bite-sized snacks up and you have a crowd pleaser. Plus, a red, white & blue option that doesn’t involve food coloring. How great!
I really do love celebrating Independence Day in festive spirit, but is it just me, or can the red, white & blue get cheesy real quick? I didn’t want to simply add red, white and blue M&Ms to my favorite cookies and I didn’t want to add food coloring to frosted cupcakes. So I went the fruit route and ended up with these delicious, yet festive, fruit and goat cheese crostini. Plus, you can count this as a “healthier” option to go along with your freedom cocktail.

Fruit, Honey & Goat Cheese Crostini
Ingredients
- 1 french loaf baguette
- 4 oz honey goat cheese or regular goat cheese
- 1 1/2 tbsp milk
- 1 pkg raspberries
- 1 pkg blueberries
- olive oil
- honey
Instructions

Set out goat cheese to bring close to room temperature. Meanwhile, slice baguette thin and brush with olive oil. Place on sheet pan & broil until crisp.
Place goat cheese in a bowl and add milk. Mix until cheese is a spreadable consistency. You can add more milk if needed.

Once baguette slices are toasted and cooled, spread a layer of goat cheese. Add fruit to the top & drizzle with honey.

Serve immediately & enjoy!
