These frosted graham cracker treats are quite possibly the simplest recipe I’ll ever share on here. But even if spreading the sprinkles is the hardest part of the process, it doesn’t downplay just how good these little squares are. The history behind the frosting + graham cracker combo comes from many summers spent at my grandma’s. Two honey graham crackers sandwiched with powdered sugar frosting in the middle – they were on her counter frequently. Tempting and ridiculously addicting. And since the weather has given us a taste of summer lately, I was feeling a bit nostalgic for these sweet treats. Although, I felt like switching it up a bit, so my version is a bit deconstructed.
After the memory surfaced of indulging at grandma’s, I decided to recreate the frosted graham cracker treats a little and after testing out a dipping option and the original sandwich version, I landed on the “cookie” option. A layer of frosting spread on the cracker just like a sugar cookie. The sprinkles are there because… well… I love sprinkles. And they’re fun, right? Since the graham crackers are easily unpackaged and separated, the frosting is the only homemade element. It’s the same powdered sugar frosting we used on the Christmas cut-out cookies – powdered sugar, a dash of milk, vanilla & almond extract. No specific measurements, simply taste test and get it to a spreading consistency. Spread on the cracker & top with sprinkles. Let set & bam, you’re done. Easy, peasy.
Watch as they disappear from your counter – seriously. I envision these frosted graham cracker treats to be perfect for any summer get-together. An easy alternative to s’mores (even though these indoor ones are fantastic), or a light treat to have around for snacking during game night. If it’s a kid-friendly party, have them create their own with all kinds of extra toppings. The options really are endless and they couldn’t get any simpler.
