I’m all about having tacos, or a form of tacos, included in the weekly dinner rotation, but what don’t I make often enough? Guacamole to go with said tacos. Why? I’m really not sure, especially after making my simple guacamole recipe on Sunday. It’s a miracle I still have some leftover to snack on because wow, did it taste good. New summer goal: add guacamole to the weekly rotation of snacks. I’ve actually posted this simple guacamole recipe on here before. But, with outdated photos and constant recipe requests, I figured it was time to share again. Plus, Cinco de Mayo is right around the corner!
Before you read any further…
…you must know my avocado mixture preferences. There are so many guacamole variations out there and everyone can make it differently and mine is based on multiple trial & error attempts. A couple things – I like a chunkier guac without too much lime and no red onion. Cilantro also mandatory. And by chunky, I mean I like my avocado a little smooth with the vegetables roughly chopped. This can absolutely vary depending on avocado ripeness and how I’m feeling that day, but generally, I stick with chunks. As most of my recipes go, this one is so simple – hence the name – and can also easily be switched up. After trying an “Iowa” version at a local eatery, I decided grilled corn may be the next addition to my infamous guacamole. I’ve also heard people use sour cream and even shredded cheese. Thoughts?
Regardless, today I’m sharing my basic recipe. One that’s proven to satisfy a crowd… and my husband. Easy to whip up in a flash to serve in my favorite hand-painted bowl from Cabo. Now all we need is a margarita.
Simple Guacamole Recipe
Simple Guacamole
Ingredients
- 3 avocados
- 1 lime
- 1 tsp salt
- 1 tsp minced garlic
- 1/2 cup onion, diced
- 2 roma tomatoes, chopped
- 2 tbsp cilantro, chopped
Instructions

Smash together avocado, juice of 1/2 the lime and salt in medium bowl, leaving some chunks of avocado.

Add in the minced garlic, onion, tomatoes and cilantro and stir until well combined.

For best flavor, chill at least 1 hour, or serve immediately. Garnish with leftover 1/2 lime and extra cilantro.

Recipe Notes
- feel free to substitute red onion or white onion
- leave 1/2 lime in during storage - I find it helps keep it more fresh!
