What better way to celebrate a new kitchen than hosting a small dinner party?

Ok, I can’t reveal our kitchen update just yet since the small details are not finished, but I promise it will be soon!  In the meantime, I’ve been slightly obsessed with Asian-inspired salads and decided it would be a great recipe to try for future meals in our new space.

Being inspired by the salad kits you can find in the produce section of almost any supermarket, I decided to take what I liked and didn’t like and make my own version.  And it turned out to be quite simple.  Chop some veggies, add some wonton strips, mix and serve.  Then, I found a delicious lemon ginger sesame vinaigrette that took this salad over the top.  With an Asian style dish, I can never skip the egg rolls and to keep this meal as simple as possible, I cheated and opted for the frozen ones.  Sorry, not sorry.

Cabbage + Kale Asian Salad

1/2 head red cabbage
1 bunch kale
1/2 bag shredded carrots
1/4 cup chopped cilantro
5-6 green onions
1 bag wonton strips
Lemon Ginger Sesame Vinaigrette

  1. Cut red cabbage & kale into small pieces. Cut green onions as desired.
  2. Mix all ingredients together and serve.

Please make note, this recipe is easily (again, easy being the theme) modified and I encourage you to do so to your liking!  Less kale, more cabbage, no cilantro, substitute red onion, or even add chicken!  The portion is very large, so it is great for a dinner party, or even make ahead lunch for the week.
