Happy New Year!

If you follow me on Instagram, you know we are travelling to the British Virgin Islands for some sunshine and relaxation during the first week of 2017, and I can’t wait to recap it with you over the next couple weeks!  But first, I’ve been saving this wonderful recipe for January, as most of us are detoxing after the holiday season and I will definitely need to after this trip.

If you’ve been on Facebook in the past year, you’ve noticed the immense popularity of Tasty and Goodful recipe videos.  These clever clips show recipes with an overhead view and make cooking seem oh-so-simple.  Every time I scroll my feed, I tell myself “skip this one”, but I stand no chance against the addicting videos.  And now I have some questions. Do people really use these recipes?  Are they as easy as these videos make them seem?  Will funky elevator music start playing while I cook?  I decided to put one to the test.

My recipe choice: Cauliflower Hash Browns. Why?  I’m addicted to potatoes and I’ve seen many recommendations for substituting cauliflower so I had to try it.  Plus, these hash browns are baked crispy with an amount of seasoning that sounded promising.

I probably watched the video 10-15 times before convincing myself I could shred cauliflower, but don’t let that keep you from trying these.  This recipe turned out to be pretty simple and not to mention, delicious.  You’re also not required to keep pausing and playing the video to follow the recipe – each post provides a link to written instructions.

After this experience, I will definitely try more recipes off their Facebook page.  Even if the elevator music wasn’t included.  Bummer.

    That sounds and looks so good. I’m totally a cauliflower fan (but also a potato) lover too so I think I’d totally love this as a healthy alternative! Would a ninja blender help with the shredding of the cauliflower do you think? Thanks for sharing this yummy masterpiece!

      Good question! I’ve never actually used a Ninja, but it’s definitely possible. I think a food processor would work!
