better with bacon.

The season officially changes today and I will excitedly say, it’s fall!

Many things come to mind when I think of fall – blanket scarves, sweater weather, bonfires, falling leaves – but nothing compares to the comfort food I immediately begin craving as the days get cooler.  The first morning chill not only brings inspiration for my highly anticipated layered-up wardrobe, it also brings desire for a new menu in the kitchen.

First up, Slow Cooker Potato Soup, another dinner idea borrowed from the farm. My mom’s original recipe called for dried parsley and minimal toppings, but knowing my husband’s taste buds, I needed to add a little kick.  I substituted Italian seasoning for dried parsley and added bacon.  Because everything is better with bacon.  Ammiright?

Here is what you’ll need.

  • 8-10 russet potatoes
  • 1 small onion
  • 2 tablespoons butter
  • 2 cubes chicken bouillon
  • 2 tablespoons Italian seasoning
  • 6 cups water
  • 2 cups milk
  • 1/2 cup flour
  • 1 package bacon
  • Cheddar cheese (topping)

Peel & cube potatoes and place in crock pot.

Toss in onion, butter, seasoning and bouillon, then add water.

Pour in flour mixture and add bacon towards the end.

Serve up and top with more bacon, cheese and anything else your heart desires!

Slow Cooker Potato Soup

  • 8-10 russet potatoes, peeled & cubed
  • 1 small onion, chopped
  • 2 tablespoons butter
  • 2 cubes chicken bouillon
  • 2 tablespoons Italian seasoning
  • 6 cups water
  • 2 cups milk
  • 1/2 cup flour
  • 1 package bacon, cooked
  • Cheddar cheese for topping

– Place potatoes, onion, butter, chicken bouillon, seasoning and water in a slow cooker.  Set on low and let cook for 6 to 8 hours.
– At least 1/2 hour before serving, stir together the milk and flour until no lumps remain.  Stir into soup.
– Cook for another 30 minutes or until soup thickens.
– Serve warm and top with cheese, extra bacon, green onions, sour cream, etc.


Highly recommended for a chilly fall Sunday with football on TV and leaves rustling outside open windows.  Mmm, mmm.
