Sign me up for National Cheesecake Day! A Saturday with no plans is even sweeter with a “holiday” celebrating your favorite dessert.
I typically find out about these off-beat holidays thru social media… two days later… but when Cheesecake Factory announces half-price slices all day, it’s hard to ignore! In anticipation of the crowds this wonderful deal will bring, I opted to scour the internet for some homemade solutions.
I’m convinced anything turned mini is better. Please don’t ask how many have disappeared already.
I followed this recipe found on Allrecipes.com. Simple ingredients, only a few steps, but I did read up on some tips. If you’ve never made cheesecake, note that the cream cheese needs to be room temperature before mixing. Also, the mixture needs to be smooth with no chunks. In one of the comments, I read a food processor can help with mixing and I did end up using it. Last but not least, don’t let the cheesecake crack while baking. It may not look done, but it sets up while cooling.

I wanted to avoid canned dessert topping, so I borrowed this strawberry topping recipe from my mama. She uses it for creme puffs, but I thought it would match up perfectly with the cheesecakes. All you need to do is mix about 1 cup of sliced strawberries with 1 tablespoon of sugar. Let mixture sit in the fridge for about an hour, or until the strawberries have soaked up the sugar.
Put them on cheesecake, or any other favorite dessert!
