Hooray for the weekend! The sun is shining, the temps are high and it feels like the perfect lazy summer day. Spending it at the pool only makes sense, right?
We have to spend these warm days wisely as July is coming to an end. How can that be?? The back-to-school commercials have officially started and the Nordstrom Anniversary Sale kicked off my fall wardrobe shopping. But, I refuse to give up on summer just yet. I still have fresh zucchini to eat!
My garden has been a success this year and we harvested so many green veggies, it made me step out of my kitchen comfort zone. And I’m so thankful it did! Because now I get to share a second zucchini recipe that you just have to try.
Chicken & Zucchini Poppers
Tasting these delicious bite-sized concoctions, you would never know how healthy they are. I didn’t intentionally seek out a health-conscious choice, but as Emily at One Lovely Life points out in the original recipe, these are Paleo & Whole30 friendly! Did I mention they are oh-so-easy, too?
Here is what you’ll need:
- 1 lb ground chicken breast
- 2 cups grated zucchini (with peel)
- 2-3 green onions, sliced
- 3-4 Tblsp cilantro, minced
- 1 clove garlic
- 1 tsp salt
- 1/2 tsp pepper
- 3/4 tsp cumin
- olive oil for cooking
They really are as simple as shred, measure, mix and cook!
It’s like a chicken crab cake. Ammiright?
My favorite guacamole was hard to pass up for dipping, but I also plan to try a chipotle mayo or basic aioli. Delish!
Chicken & Zucchini Poppers
- 1 lb ground chicken breast
- 2 cups grated zucchini (with peel)
- 2-3 green onions, sliced
- 3-4 Tblsp cilantro, minced
- 1 clove garlic
- 1 tsp salt
- 1/2 tsp pepper
- 3/4 tsp cumin
- olive oil for cooking
– Toss chicken with zucchini, green onion, cilantro, garlic, salt, pepper, and cumin. Mixture will be wet.
– Heat a drizzle of olive oil in a medium pan over medium heat. Use small scooped (a bit over 1 Tblsp) to scoop poppers into pan.
– Cook 8-10 at a time for about 5-6 minutes. Flip and cook another 4-5 minutes, or until golden brown and middle is cooked thru. Note: mine did take a little longer on each side – just make sure the chicken is fully cooked!
– Serve warm with favorite guacamole or dip

It’s winter in Perth. We are cooking soups and roasts to keep us feeling sated. Roll on summer and avocados and salads. Like your recipes. I will use them in summer,they look delicious.
