“Why are you so obsessed with guacamole?” -my husband
Well, my love, the reasons are endless. But, it’s almost Cinco de Mayo and I’ll use that as my excuse this week.
The first time I dove into making guacamole, I was skeptic. I didn’t believe anyone could recreate the divine avocado mixture our local cantina serves up with salty margaritas. But, I went for it anyway. And a few (hundred) attempts and tweaks later, I have for you the only guacamole my husband will eat.
Here’s what you need.
Fresh ingredients are best, but don’t mind my jarred minced garlic. It’s just easier!
And a little shout out to this guy – my avocado tool. You have made my kitchen complete. Seriously though, avocado lovers, get yours here.
Ok, now onto the work. Peel and pit the avocados, then mash together with lime juice and salt. If you like chunky guac, don’t mash too much!
Add in the tomatoes, onion, garlic, and cilantro. Mix together well.
Garnish with cilantro and remaining lime slice – and serve with tortilla chips! The true recipe allows the guacamole to sit in the fridge for an hour for best flavor, but I usually test taste immediately for quality assurance. Riiiiight.

Guacamole
3 avocados, pleeled, pitted and mashed
2 Roma tomatoes, diced
1/2 cup diced onion
1 tsp salt
1 tsp minced garlic
3 tbsp chopped cilantro
1 lime, juiced *depending on size, I may only use half the lime to keep flavor from overpowering.
In a medium bowl, mash together the avocados, lime juice and salt. Mix in onion, cilantro, tomatoes and garlic. Refrigerate 1 hour for best flavor or serve immediately.
